Transformed Spinach Dip in Bread Bowl - Healthier but just as delicious!
Ingredients:
  • 2 boxes (9 oz each) frozen chopped spinach
  • 1 can (8 oz) sliced water chestnuts, drained, chopped
  • 1 cup chopped green onions
  • 1 cup low-fat sour cream
  • 1 cup plain fat-free Greek yogurt
  • 2 teaspoons chopped fresh tarragon leaves or dill weed
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 1 lb round loaf unsliced 100% whole wheat bread
Instructions:
  • Prepare and cook the spinach according to the instructions on the boxes. Allow the spinach to cool, then squeeze out excess water and discard it. In a large bowl, combine all ingredients except for the bread. Cover the bowl and refrigerate for at least 1 hour to let the flavors blend.
  • Before presenting, slice off the top of the loaf, cutting a 1- to 2-inch slice. Use a serrated knife to hollow out the loaf by cutting along the edge, leaving a 1-inch shell, and removing large chunks of bread. Tear the top slice and the hollowed-out bread into bite-size pieces.
  • Place a hollowed-out loaf on a serving plate and generously fill it with creamy spinach dip. Artfully arrange the bread pieces around the loaf for an inviting presentation, perfect for dipping and sharing with loved ones.
