Healthier spinach dip with reduced fat, calories, and saturated fat.
Ingredients:
  • 4 cups lightly packed fresh baby spinach leaves (4 oz)
  • 1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 1/4 cup reduced-fat mayonnaise
  • 4 tablespoons shredded Parmesan cheese (1 oz)
  • 1/4 cup fat-free (skim) milk
  • 1 teaspoon dried basil leaves
  • 1 can (14 oz) artichoke hearts, drained, chopped
  • Baguette slices, if desired
  • Assorted raw vegetables, if desired
Instructions:
  • Preheat oven to 350°F and generously grease a 1-quart glass baking dish or a 9-inch glass pie plate with cooking spray.
  • Put spinach in 2-quart microwave-safe casserole dish with 1/4 cup water. Cover and microwave on High for 2 minutes. Drain thoroughly, gently pressing spinach with paper towels to remove excess liquid. Finely chop spinach.
  • In a large bowl, whisk together cream cheese until smooth. Mix in mayonnaise, 3 tablespoons of Parmesan cheese, milk, garlic, and basil until fully combined. Fold in spinach and artichokes. Transfer mixture to a baking dish and sprinkle with remaining tablespoon of cheese.
  • Bake for 20-25 minutes until piping hot. Serve with sliced baguette or fresh vegetables.
