Slow-cooked shredded chicken tacos with zesty tomatoes and chile peppers, ideal for entertaining or serving a large group.
Ingredients:
  • 3 pounds skinless, boneless chicken breast halves
  • 3 tablespoons salt
  • 1.5 tablespoons ground cumin
  • 1.5 tablespoons paprika
  • 1.5 tablespoons chili powder
  • 1.5 tablespoons cayenne pepper
  • 2 (14 ounce) cans diced tomatoes
  • 2 white onions, diced
  • 2 jalapeno peppers, diced
  • 2 habanero peppers, diced
  • 6 cloves garlic, pressed
  • 1 lime, halved
  • 18 corn tortillas
Instructions:
  • Season the chicken generously with salt, cumin, paprika, chili powder, and cayenne pepper. Transfer the seasoned chicken to the slow cooker and add diced tomatoes, onions, jalapenos, habanero peppers, and garlic. Squeeze fresh lime juice over everything and gently stir to combine.
  • Cook the chicken breasts until they are fully cooked through, approximately 4 1/2 hours on High heat.
  • Take out the chicken, shred the meat using 2 forks, and add it back to the pot. Mix everything together and serve with tortillas.
