Succulent Spanish beef stew with sofrito, olives, potatoes, garlic, and tomatoes slow-cooked to perfection.
Ingredients:
  • 1 pound beef stew meat
  • salt and ground black pepper to taste
  • 0.5 cup chopped Spanish onion
  • 2 cloves garlic, minced
  • 2 cups chopped red potatoes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (12 ounce) jar sofrito
  • 0.5 cup pitted and halved green olives
Instructions:
  • 1. Heat a large skillet over medium heat until sizzling hot. 2. Brown the beef in the skillet for about 5 minutes, seasoning with salt and pepper as it cooks. 3. Transfer the beef to a slow cooker, leaving some of the flavorful drippings in the skillet.
  • Heat the skillet over medium heat and warm up the reserved drippings. Cook the onion and garlic in the hot drippings until softened, for about 5 minutes. Add this mixture to the beef in the slow cooker.
  • Incorporate potatoes, diced tomatoes, sofrito, and olives into the beef mixture, blending all the flavors together beautifully.
  • Slow cook until the beef and potatoes are tender when pierced with a fork, about 4 to 5 hours.
