Effortlessly delicious slow cooker vegan chili with tomatoes and kidney beans.
Ingredients:
  • 2 sweet potatoes, peeled and chopped into 2-inch pieces
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 yellow onion, diced
  • 1 red bell pepper, seeded and chopped
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon Kosher salt
  • 1 cup water
Instructions:
  • In a 6-quart slow cooker, combine sweet potatoes, kidney beans, diced tomatoes, onion, bell pepper, garlic, chili powder, paprika, salt, water, and orange juice. Cover and cook.
  • Cook on High for a quicker 3 to 4 hours or on Low for a slow-cooked perfection of 6 to 8 hours until sweet potatoes are fork tender.
