Slow-Cooker Vegan Mashed Potatoes

Easy, creamy vegan mashed potatoes made effortlessly in the slow cooker. Perfect for Thanksgiving, pleasing vegans and non-vegans alike. Set it and forget it for a stress-free side dish that will surely be a crowd favorite.
Ingredients:
  • 5 lb baking potatoes, peeled, cut into 1-inch pieces
  • 2 cups water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup vegan buttery spread, cut into tablespoons
  • 1 cup unsweetened almond milk, warmed
Instructions:
  • Coat a 5-quart slow cooker with cooking spray. Add potatoes, water, garlic powder, onion powder, salt, and pepper to the slow cooker; mix well. Spread vegan buttery spread evenly over the mixture.
  • Cover and cook on High heat for 4 to 4.5 hours until potatoes are tender.
  • Mash potatoes using a potato masher or beat with an electric mixer on low speed until well blended, being careful not to overmix. Stir in almond milk.
