Slow Cooker White Chocolate Bread Pudding

Easy slow cooker bread pudding with brandy cherries and white chocolate chips.
Ingredients:
  • 0.5 cup dried cherries
  • 3 tablespoons brandy
  • 6 cups stale French bread cubes
  • 0.5 (12 ounce) package white chocolate baking chips
  • 4 eggs
  • 0.33333334326744 cup white sugar
  • 1 cup half-and-half
Instructions:
  • Inspect the cherries to ensure all pits have been removed. Combine the cherries and brandy in a bowl, then microwave on high for 30 seconds. Allow to cool for roughly 30 minutes, then drain.
  • Butter the 3 1/2-quart slow cooker generously. Add half of the bread cubes to create a base layer. Sprinkle half of the cherries and white chocolate chips over the bread cubes. Repeat with remaining bread cubes, cherries, and chocolate for the top layer.
  • In a medium bowl, vigorously whisk together the eggs and sugar until smooth. Add the half-and-half and vanilla, then stir until well combined. Slowly pour the mixture over the bread, gently pressing the bread down to soak up the liquid.
  • Cook covered on High until fluffy and fully cooked, approximately 1 hour 15 minutes. Serve warm or at room temperature.
