Easy crockpot tri-tip roast: Mix ingredients, slow cook for 4 hours, delicious dinner done!
Ingredients:
  • 2 tablespoons olive oil, or as needed, divided
  • 2.25 pounds seasoned beef loin tri-tip roast
  • 1 medium yellow onion, halved and sliced
  • 0.5 cup water
  • 1 beef bouillon, crumbled
  • 1 clove garlic, minced
  • 1 pinch adobo seasoning (such as Goya®), or more to taste
Instructions:
  • Grease the inside of a slow cooker with approximately 1 tablespoon of oil.
  • In a large skillet over medium-high heat, sear the roast in the remaining oil until browned, about 5 minutes per side. In the last 5 minutes, cook and stir the onion in the skillet. Transfer the roast to the slow cooker, leaving the onion in the skillet.
  • Add water to the skillet and then sprinkle in bouillon, garlic, and adobo seasoning. Cook and stir until the onion is tender, approximately 5 minutes. Then pour the flavorful mixture over the roast.
  • Cook the roast covered on High for about 4 hours until it is firm and reddish-pink in the center. Check for doneness with an instant-read thermometer; it should read 140 degrees F (54 degrees C) for medium.
