Slow-cooked garlic in oil intensifies flavor, enhances sweetness, and reduces sharpness.
Ingredients:
  • 2 heads garlic
  • 0.125 teaspoon red pepper flakes
  • 0.66666668653488 cup olive oil
Instructions:
  • Preheat the oven to 250°F (120°C) for the perfect cooking temperature.
  • Peel garlic cloves and place them in a small 2-cup baking dish or large ramekin. Season with salt and red pepper flakes, then generously drizzle with oil to coat all cloves. Cover the dish with foil.
  • Roast in the oven until garlic cloves are tender and lightly golden on the edges, for about 1 1/2 to 2 hours. Avoid overcooking to prevent bitterness.
  • Place the garlic cloves into a pristine jar. Drizzle with oil until lightly covered. Seal the jar tightly and refrigerate; enjoy within 3 to 5 days.
