Slow-cooked garlic-infused top sirloin roast with hearty vegetables in savory beef broth for ultimate tenderness and flavor.
Ingredients:
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 (3 pound) top sirloin roast
  • 6 cloves garlic, slivered
  • 6 Yukon Gold potatoes, peeled and quartered
  • 4 carrots, cut into 2 inch pieces
  • 2 large sweet onions, peeled and chopped
  • 0.5 cup water
  • 0.5 cup beef broth
  • 3 cubes beef bouillon
  • 1 bay leaf
  • 2 large green bell peppers, cut into 2 inch pieces
Instructions:
  • Mix salt, pepper, and paprika in a bowl, then massage onto roast. Use a small knife to create slits on the top of the roast and insert garlic slivers into the slits.
  • Add the potatoes, carrots, and onions to a large slow cooker, then nestle the roast on top. Pour in the water and beef broth, and gently drop in the bouillon cubes and bay leaf.
  • Add green peppers to the mixture during the final 30 minutes of cooking, whether on Low for 8 hours or High for 6 hours.
