Garlic paprika sirloin roast with flavorful beer sauce.
Ingredients:
  • 1 (3 pound) beef top-sirloin roast
  • 3 cloves garlic, slivered, or to taste
  • 1 teaspoon ground paprika, or to taste
  • 6 Yukon Gold potatoes, quartered
  • 5 carrots, cut into 2-inch pieces
  • 2 large sweet onions, quartered
  • 3 cubes beef bouillon
  • 0.5 cup hot water
  • 1 cup beef broth
  • 0.5 cup beer
  • 2 bay leaves, broken, or more to taste
  • 2 large red bell peppers, cut into 2-inch pieces
  • 0.5 cup mushrooms
Instructions:
  • Score the beef roast with a sharp knife and insert slivers of garlic into the cuts. Coat the entire roast with minced garlic, paprika, salt, and black pepper. Let it sit at room temperature for 15 to 30 minutes before cooking.
  • Preheat your oven to 325°F (165°C).
  • Spread out the potatoes, carrots, and onions evenly in a 9x12-inch roasting pan. Combine beef bouillon cubes with hot water in a small bowl, then pour over the vegetables along with the beef broth and beer.
  • Place the beef roast on top of the vegetables, ensuring it is not covered by the broth mixture, then scatter the bay leaf pieces around the roast.
  • Roast the beef in a hot oven until it reaches a perfect tenderness at 150°F (66°C) for medium doneness, typically within 45 to 60 minutes. Then let it rest on a platter, covered with foil, until it reaches 155°F (68°C) inside, about 10 minutes.
  • Preheat oven to a higher temperature of 425 degrees F (220 degrees C), then roast bell peppers and mushrooms in a pan until tender and lightly browned, about 15 to 20 minutes.
  • Slice the beef roast thinly. Serve with vegetables and spoon the delicious pan juices over each serving.
