Crispy top sirloin stir-fried in a sweet savory orange-ginger sauce.
Ingredients:
  • 1.5 pounds beef top sirloin, thinly sliced
  • 2 cups water
  • 1 cup long grain rice
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup rice wine vinegar
  • 2 tablespoons frozen orange juice concentrate
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 2 cups oil for frying
  • 0.25 cup cornstarch
  • 3 tablespoons grated fresh ginger
  • 1.5 tablespoons minced garlic
  • 2 teaspoons orange zest
  • 8 broccoli florets, lightly steamed or blanched
Instructions:
  • Place the beef in a single layer on a paper towel-lined baking sheet. Refrigerate for 30 minutes to dry.
  • While the water and rice come to a boil in a saucepan, lower the heat, cover, and let it simmer until the rice is tender, approximately 20 minutes.
  • Combine sugar, rice vinegar, orange juice concentrate, soy sauce, and salt in a small bowl, and let the flavors meld together while you prepare the rest of the dish.
  • In a heated wok, coat dried beef in cornstarch and fry in batches until crispy and golden brown. Reserve 1 tablespoon of oil in the wok.
  • Add the aromatic blend of ginger, garlic, and orange zest to the luscious oil in the wok. Sauté briefly until the enticing aromas fill the air. Next, add the soy sauce mixture to the wok, bringing it to a delightful boil and simmer until it transforms into a luscious, syrupy consistency, which usually takes about 5 minutes. Toss in the crispy fried beef and gently cook until it reaches the perfect temperature. Serve this delectable dish over a bed of fluffy steamed rice and elegantly garnish with vibrant broccoli.
