Crispy orange pizzelle with zesty orange twist and hint of triple sec. A modern take on classic Italian holiday cookies.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3 eggs, at room temperature
  • 0.5 cup butter, melted
  • 1 tablespoon orange extract
  • 2 teaspoons triple sec (orange-flavored liqueur)
  • 8 drops yellow food coloring
  • 4 drops red food coloring
  • 2 teaspoons finely grated orange zest
Instructions:
  • Combine the flour and baking powder by sifting them in a small bowl.
  • In a large bowl, use an electric mixer on medium speed to beat eggs, gradually adding sugar until thickened. Slowly beat in melted butter. Mix in orange extract, triple sec, yellow and red food coloring. Gently fold in sifted flour and baking powder until smooth and stiff. Finally, fold in grated orange zest.
  • Prepare your pizzelle baker by greasing it lightly and preheating it as per the manufacturer's guidelines.
  • Drop batter onto the preheated pizzelle baker using a small ice cream scoop or tablespoon cookie scoop. Bake until browned, for 30 to 40 seconds, then transfer to a cooling rack to cool completely.
