Slow-Cooker Bean and Sausage Minestrone

Slow-cook hearty sausage soup for a cozy night in. Buy sausage in bulk on sale and freeze for easy last-minute dinners.
Ingredients:
  • 1 package (20 ounces) 15-dried bean soup mix, sorted and rinsed
  • 8 cups water
  • 12 ounces bulk Italian sausage
  • 1 medium onion, chopped (1/2 cup)
  • 2 medium carrots, chopped (1 cup)
  • 2 cans (14 ounces each) beef broth
  • 2 cups water
  • 2 cans (14.5 ounces each) Italian-style stewed tomatoes, undrained and large pieces cut up
  • 1/2 cup uncooked small pasta shells
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • If the bean soup mix includes a seasoning mix, set it aside. In a 4-quart saucepan, bring the beans and 8 cups of water to a boil. Lower the heat and simmer uncovered for 10 minutes. Remove from heat, cover, and let it sit for 1 hour.
  • Saute the sausage and onion in a 10-inch nonstick skillet over medium heat, stirring occasionally, until the sausage is cooked through; drain excess fat if needed.
  • Discard bean water. Combine beans, sausage mixture, carrots, broth, and 2 cups water in a 5- to 6-quart slow cooker.
  • Simmer covered on Low for 8-9 hours.
  • Add tomatoes and pasta to the pot, then turn up the heat to High. Cover and let it cook for around 30 minutes until the pasta is tender. Serve each portion with a generous sprinkle of cheese and parsley on top.
