Slow-Cooker Beef-Tortellini Soup

Savory, slow-cooked beef soup with rich and aromatic flavors.
Ingredients:
  • 1 lb beef stew meat
  • 1 large onion, chopped (3/4 cup)
  • 1 large carrot, chopped (3/4 cup)
  • 1 medium stalk celery, chopped (1/2 cup)
  • 2 teaspoons sugar
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cans (10 1/2 oz each) condensed beef consommé
  • 1 teaspoon dried basil leaves
  • 2 cups frozen cheese-filled tortellini
  • 1 cup frozen cut green beans
Instructions:
  • Place the beef, onion, carrot, celery, garlic, sugar, tomatoes, and beef consommé in a 3 1/2- to 4-quart slow cooker in the same order as listed.
  • Gently cover and let it simmer on low heat for 8 to 9 hours.
  • 25 minutes before serving, gently fold in fragrant basil, frozen tortellini, and crisp green beans. Turn up the heat to High, cover, and cook for another 25 minutes until the beans are tender.
