Slow-Cooker Chipotle Pork Roast

Impress your family with this tender, smoky roast and flavorful sauce.
Ingredients:
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 teaspoons ground cumin
  • 9 small unpeeled red potatoes, quartered
  • 3 small sweet potatoes, peeled, quartered
  • 1 medium onion, cut into 3/4-inch wedges (about 1/2 cup)
  • 1 boneless pork shoulder roast (2 1/2 to 3 lb)
  • 2 tablespoons olive or vegetable oil
  • 1 can (8 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 canned chipotle chile in adobo sauce, finely chopped (about 1/2 tablespoon)
  • 2 tablespoons water
  • 2 tablespoons cornstarch
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a large bowl, combine chili powder, salt, garlic powder, and cumin. Add the potatoes, sweet potatoes, and onion to the bowl and mix well to coat them. Transfer the coated vegetables into the slow cooker.
  • Remove the netting from the pork, then rub it with oil and roll it in spices to coat. Place the pork on top of the vegetables and pour tomato sauce, diced tomatoes, and chopped chile over everything.
  • Cover and simmer on low heat for 6 to 8 hours.
  • Take out the pork and vegetables from the cooker and keep them warm. Transfer the sauce from the cooker to a 3-quart saucepan. In a small bowl, combine water and cornstarch, then stir it into the sauce. Cook over high heat for 5 to 10 minutes, stirring often, until the sauce thickens. Serve the thickened sauce with the pork and vegetables.
