Slow-Cooker Corned Beef Brisket with Horseradish Sour Cream

Transform traditional corned beef into a modern slow cooker dish.
Ingredients:
  • 1 large sweet onion (Bermuda, Maui or Spanish), sliced
  • 1 well-trimmed corned beef brisket (3 to 3 1/2 lb)
  • 3/4 teaspoon crushed red pepper flakes
  • 1 cup Progresso™ reduced-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • 1 tablespoon cream-style prepared horseradish
  • 2 tablespoons chopped fresh parsley
Instructions:
  • 1. Place the onion in a 5- to 6-quart slow cooker. Rinse the beef well and discard the seasoning packet. Put the beef on top of the onion and sprinkle with red pepper flakes. Combine the broth and Worcestershire sauce in a small bowl, then pour the mixture over the beef.
  • Simmer covered on Low for 8 to 9 hours until the beef is tender.
  • Take out the beef and onion from the cooker using a slotted spoon. Slice the beef thinly across the grain. In a small bowl, mix sour cream, horseradish, and parsley until well blended. Serve alongside the beef and onion.
