Cozy up with a comforting New England boiled dinner featuring tender beef brisket, hearty veggies, and potatoes - perfect for a slow cooker!
Ingredients:
  • 8 whole cloves
  • 1 bay leaf
  • Salt, if using plain brisket
  • 3 1/2 pounds corned beef brisket or plain beef brisket
  • 15 peppercorns
  • 2 medium sized turnips, peeled and quartered
  • 4 red new potatoes, peeled and quartered
  • 3 large carrots, cut into thirds and the thickest pieces quartered lengthwise
  • 1 small head cabbage, cut into fourths
Instructions:
  • Add the brisket to a 5- or 6-quart Dutch oven, ensuring it is covered with an inch of water. Include peppercorns, cloves, and a bay leaf if your corned beef brisket lacks seasoning. For fresh brisket, add 1 teaspoon of salt per quart of water. Simmer gently with a lid on for 4 hours, or until the meat is fork-tender.
  • Take out the meat and keep it warm. Introduce the vegetables into the pot. Taste the broth and adjust seasoning if needed. Increase the heat and bring the soup to a vigorous simmer. Let it cook until the vegetables are tender, which should take about 15 to 30 minutes, depending on their size.
  • - Slice the meat thinly across the grain. For easier slicing, cut the roast in half along the same direction as the grain before slicing into smaller pieces.
