Holiday party-perfect sweet-and-spicy meatballs made effortlessly in the slow cooker.
Ingredients:
  • 2 teaspoons oil
  • 1 cup finely diced onion
  • 1 clove garlic, finely chopped
  • 1 cup Progresso™ plain bread crumbs
  • 1/4 cup milk
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground allspice
  • 1 can (14 oz) whole-berry cranberry sauce
  • 3 diced chipotle chiles in adobo sauce, plus 1 tablespoon adobo sauce from can
Instructions:
  • In an 8-inch skillet, heat oil over medium heat. Saute onions until translucent and softened for 3 to 5 minutes. Then, add garlic and cook for an additional 2 minutes. Finally, remove from heat.
  • Soak bread crumbs in milk in a large bowl until softened. Mix in cooled onion mixture, beef, egg, salt, pepper, and allspice until combined. Shape mixture into around 30 walnut-sized meatballs and place them in the slow cooker.
  • Combine the cranberry sauce and chipotle chiles in adobo in a separate bowl. Pour this flavorful mixture over the meatballs in the slow cooker. Cook on Low heat setting for 8 hours, then serve with toothpicks and/or bread.
