Slow-Cooker Double Ginger Apple Butter

Slow-cooker apple butter with a zesty twist of crystallized and fresh ginger - a flavorful crowd-pleaser.
Ingredients:
  • 3 lb Gala apples, peeled, cored and shredded
  • 1/2 cup packed light brown sugar
  • 2 tablespoons finely chopped crystallized ginger
  • 1 tablespoon finely chopped gingerroot
  • 1/4 teaspoon salt
Instructions:
  • Prepare your 5-quart slow cooker by generously spraying it with cooking spray. Then, simply add all the ingredients and give them a good stir to combine.
  • Seal with a lid and simmer over high heat for 3 hours.
  • Continue cooking over high heat, stirring occasionally, for an additional 1 to 2 hours until the mixture thickens. Then, turn off the heat and allow it to cool for 15 minutes before serving.
  • Blend until velvety smooth in a food processor or blender, working in batches if necessary.
  • Allow the apple butter to cool completely before transferring it into jars and sealing them tightly. Store the jars in the refrigerator.
