Honey-glazed root veggies slow-cooked to perfection - a delightful side dish.
Ingredients:
  • 6 medium carrots, cut diagonally into 1-inch pieces
  • 4 medium parsnips, peeled, cut diagonally into 1-inch pieces
  • 2 medium red onions, cut into thin wedges
  • 2 medium dark-orange sweet potatoes (about 1 lb), peeled, cut into 1-inch pieces (3 cups)
  • 3 tablespoons honey
  • 1 tablespoon olive oil
  • 5 teaspoons chopped fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon white balsamic vinegar
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Combine the carrots, parsnips, and onions in the slow cooker and layer sweet potatoes on top.
  • Combine honey, oil, 2 teaspoons of thyme, salt, and pepper in a small bowl. Drizzle the mixture over the vegetables and toss until evenly coated.
  • Cover and let the dish simmer on Low heat for 4 to 5 hours until the vegetables are tender. Right before serving, mix in the vinegar and gently stir. Finish by sprinkling the remaining 3 teaspoons of thyme on top.
