Slow-Cooker Hearty Pork Stew

Indulge in a flavorful pork loin stew with carrots, parsnips, and squash, effortlessly cooked in your slow cooker.
Ingredients:
  • 1 1/2 pounds pork boneless loin, cut into 1-inch cubes
  • 3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 1 carton (32 ounces) Progresso™ chicken broth (4 cups)
  • 2 cups 1/2-inch diced peeled parsnips
  • 1 1/2 cups 1-inch cubes peeled butternut squash
  • 1/2 teaspoon pepper
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 3 tablespoons butter or margarine, softened
Instructions:
  • Combine all ingredients, excluding flour and butter, in a 3 1/2- to 6-quart slow cooker.
  • Slow cook until pork is cooked through and vegetables are tender, about 6-7 hours on low or 3-4 hours on high heat setting.
  • Incorporate flour mixture into pork mixture slowly, one spoonful at a time, gently stirring until fully combined.
  • Cook with the lid on over high heat for 30-45 minutes, stirring occasionally, until the mixture thickens. Please refer to the manufacturer's instructions for layering ingredients and selecting the temperature if using a slow cooker with just a heated base.
