Slow-Cooker Italian Turkey Sandwiches

"Create 12 savory garlic-cheese turkey sandwiches with just 5 ingredients in your slow cooker."
Ingredients:
  • 3 lb turkey thighs, skin removed
  • 1/3 cup Italian dressing
  • 12 small French sandwich rolls (3 inches long)
  • 1 container (6.5 oz) garlic-and-herb spreadable cheese
  • 1 jar (7.25 oz) roasted red bell peppers, drained, cut into strips
Instructions:
  • Add the turkey to a 3- to 4-quart slow cooker.
  • Cover and simmer on low heat for 7 to 8 hours.
  • Using a slotted spoon, transfer the turkey from the cooker to a cutting board. Discard the liquid in the cooker and remove the bones from the turkey. Use 2 forks to shred the turkey before returning it to the cooker. Stir in the Italian dressing.
  • Slice the rolls in half horizontally. Spread each bottom half with a generous tablespoon of spreadable cheese. Top with 1/3 cup turkey and a portion of roasted peppers. Keep the turkey mixture warm on Low heat for up to 2 hours, stirring occasionally.
