Elevate your Italian dinner with savory slow-cooked turkey and zucchini in rich tomato paste. A delectable delight for the whole family!
Ingredients:
  • 2 bone-in turkey thighs (about 1 1/2 lb), skin removed
  • 1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained
  • 2 tablespoons tomato paste
  • 2 cloves garlic, finely chopped
  • 1 cup uncooked couscous
  • 1 1/2 cups water
  • 2 cups sliced zucchini
Instructions:
  • Place the turkey thighs in a 3 1/2- to 4-quart slow cooker. Mix together tomatoes, tomato paste, and garlic in a small bowl, then pour the mixture over the turkey.
  • Cover and simmer on low heat for 6-8 hours.
  • Cook the couscous according to package instructions about 25 minutes before serving. Turn the heat setting on the slow cooker to High, then stir in the zucchini into the tomato mixture. Cover and cook for an additional 20 minutes or until the zucchini is tender.
  • When ready to serve, debone the turkey. Gently mix to shred the turkey. Serve atop fluffy couscous.
