Slow-Cooker Jalapeño Popper Chicken Sandwiches

Spicy slow-cooker appetizer sandwich fusion.
Ingredients:
  • 1/2 cup chopped onion
  • 2 lb boneless skinless chicken breast
  • 1/2 cup salsa verde
  • 1 can (10.5 oz) Muir Glen™ diced tomatoes, undrained
  • 2 tablespoons butter
  • 3 slices diced cooked bacon
  • 2/3 cup Progresso™ plain bread crumbs
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/4 cup milk
  • 4 large buns
  • 1/2 cup pickled sliced jalapeño chiles, if desired
Instructions:
  • Place a layer of chopped onions at the bottom of the 6-quart slow cooker, then lay the chicken breasts on top. Season the chicken with salt for added flavor.
  • Top the chicken with salsa verde and diced tomatoes, covering it before cooking on High heat setting for 4 hours.
  • Use 2 forks to shred the chicken. Keep warm in the slow cooker on low until ready to make sandwiches.
  • In a 1-quart saucepan over medium heat, melt 2 tablespoons of butter. Add diced bacon and bread crumbs, and stir for 2 to 3 minutes until lightly toasted. Remove from heat and set aside.
  • Heat the Cheese Sauce ingredients in a 1-quart saucepan over medium-low heat, stirring constantly until smooth.
  • Layer pulled chicken on large buns, top with cheese sauce, toasted bacon bread crumbs, and pickled sliced jalapeño chiles for a delicious kick.
