Slow-Cooker Short Ribs in Red Wine

Slow cooker short ribs in flavorful tomato, wine, and beef broth sauce for a hassle-free, exquisite meal.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 3 lb bone-in beef short ribs
  • 1/4 teaspoon salt
  • 1 can (14.5 oz) stewed tomatoes, undrained
  • 1 medium onion, chopped (1/2 cup)
  • 2 tablespoons tomato paste
  • 1/2 cup red wine or Progresso™ beef flavored broth
  • 1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup water
  • 2 tablespoons cornstarch
Instructions:
  • Heat oil in a 12-inch skillet over medium-high heat. Add beef ribs, season with salt and pepper, and cook for 4 to 6 minutes, turning occasionally, until browned.
  • 1. Grease a 3- to 4-quart slow cooker with cooking spray. Combine tomatoes, onion, and tomato paste in the cooker and stir. Add ribs, wine, broth, and Worcestershire sauce.
  • Cover and simmer on Low heat for 7 to 9 hours.
  • Remove the ribs and bones, keep the ribs warm. Discard bones and skim off any fat from the cooker. In a small bowl, combine water and cornstarch, then stir into the cooker. Increase heat to High, cover, and cook for another 10-15 minutes until the sauce thickens. Serve the sauce over the ribs.
