Slow-Cooker Spinach-Stuffed Cubed Steaks

Juicy beef steaks stuffed with spinach - a delicious home-cooked dinner.
Ingredients:
  • 4 beef cubed steaks (about 1 1/4 pounds)
  • 1/4 cup basil pesto
  • 1 tablespoon plus 1 teaspoon instant minced onion
  • 1 package (9 ounces) frozen chopped spinach, thawed and squeezed to drain
  • 1/2 cup beef broth
  • 1 teaspoon finely chopped garlic
  • 1 tablespoon cornstarch
  • 1 tablespoon water
Instructions:
  • Pound beef steaks to 1/8-inch thickness. Spread 1 tablespoon pesto on each steak, sprinkle with 1 teaspoon onion. Add spinach to cover steaks and roll them up, securing with toothpicks.
  • Place the steaks in a 2- to 3 1/2-quart slow cooker and pour the mixture of broth and garlic over them.
  • Cook on low heat for 8 to 9 hours until the beef is tender.
  • Transfer the steaks from the cooker to a serving platter and cover to keep warm.
  • If desired, skim fat from beef juices in the cooker. Measure 1 cup of juices and pour it into a small saucepan. Mix cornstarch with water and stir into the juices. Cook over medium-high heat for about 5 minutes, stirring frequently until thickened. Serve over steaks.
