Slow cooker sausage and sweet potato dish, also perfect as a side. Serve with salad greens tossed in dressing for an easy and delicious meal.
Ingredients:
  • 12 oz bulk pork sausage, thawed if frozen
  • 2 large leeks, sliced (about 2 cups)
  • 1 teaspoon dried thyme leaves
  • 3 lb dark orange sweet potatoes, peeled, cut into 1/4-inch slices (8 cups)
  • 1 cup freshly shredded Parmesan cheese
  • 1/4 cup apple juice or chicken broth
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a 10-inch skillet, cook the sausage over medium-high heat until no longer pink, then drain any excess grease. Add in the leeks and thyme.
  • Layer a generous amount of sweet potatoes, savory sausage mixture, and cheese in the slow cooker. Repeat the layers with the remaining sweet potatoes and sausage mixture. Finish by pouring apple juice over the top and sprinkling the remaining cheese for an extra indulgent touch.
  • Cover and cook on high heat for 2 1/2 to 3 hours until the sweet potatoes are tender.
