Pinto beans simmered with ham, garlic, brown sugar, and zesty tomatoes and green chiles for a flavorful twist.
Ingredients:
  • 1 (16-oz.) pkg. (3 1/4 cups) dried pinto beans, sorted, rinsed
  • 2 cups water
  • 1 cup chopped onions (2 medium)
  • 1/2 cup finely chopped cooked ham
  • 2 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1 (14 1/2-oz.) can diced tomatoes with green chiles, undrained
Instructions:
  • In a large saucepan, add beans and 10 cups of water. Bring to a boil, then lower the heat to simmer for 1 to 1 1/2 hours until the beans are tender but still firm, stirring occasionally.
  • Drain the beans and place them in a 3 1/2 to 4-quart slow cooker. Stir in 2 cups of water and all remaining ingredients, excluding the tomatoes, until well combined.
  • Cover and simmer on low heat for 8 hours.
  • Stir in the tomatoes thoroughly. Cover and simmer for an extra 1 to 2 hours until the beans are tender.
