Slow-Cooker Beef Chili

Zesty slow-cooker beef stew with diced tomatoes, green chiles, garlic, and spices. Let the slow cooker do the work for a flavorful and satisfying meal.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 1 large onion, coarsely chopped (1 cup)
  • 2 teaspoons finely chopped garlic
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1/8 teaspoon pepper
  • 2 lb beef stew meat
  • 2 cans (15 oz each) Progresso™ black beans, drained, rinsed
  • 2 cans (14.5 oz each) diced tomatoes with green chiles, undrained
  • 1/2 cup water
Instructions:
  • Heat oil in a 12-inch skillet over medium-high heat. Cook onions and garlic for 4 to 5 minutes, stirring frequently, until onions are softened.
  • Add chili powder, cumin, salt, pepper, and beef to the pot. Cook for 6 to 8 minutes, stirring occasionally until the beef is lightly browned.
  • Place the beef mixture in a 3- to 4-quart slow cooker, then mix in the beans, tomatoes, and water.
  • Cover and simmer on Low heat for 8-10 hours, then give it a good stir before serving.
