Tasty slow cooker beef chili with black beans, kidney beans, and zesty tomatoes and chiles - a crowd pleaser!
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 large onion, coarsely chopped
  • 2 teaspoons finely chopped fresh garlic
  • 1.5 pounds ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 0.5 teaspoon kosher salt
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (15 ounce) cans red kidney beans, rinsed and drained
  • 2 (14.5 ounce) cans diced tomatoes and green chile peppers, undrained
Instructions:
  • In a large skillet over medium-high heat, sauté onion and garlic until softened, about 4 to 5 minutes. Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is lightly browned and crumbly, about 5 to 8 minutes, stirring occasionally.
  • Transfer the flavorful beef mixture into a slow cooker and combine it with black beans, kidney beans, diced tomatoes, and chiles. Cover and let it cook on Low for 8 to 10 hours, remembering to stir occasionally for best results.
