Indulge in tender slow-cooked pork with zesty horseradish apple sauce, perfect for winter!
Ingredients:
  • 1.2kg pork scotch (neck)
  • 255.00 gm chicken style liquid stock
  • 2 sprigs fresh rosemary
  • 900g desiree potatoes, peeled, roughly chopped
  • 50g butter
  • 128.75 gm milk
  • 174.90 gm apple sauce
  • 11.80 gm prepared horseradish
  • Steamed baby carrots, to serve
  • Steamed green beans, to serve
Instructions:
  • Place the pork, stock, and rosemary in a slow cooker, cover with the lid, and cook on high for 4 hours until the pork is very tender.
  • In a large saucepan, boil the potato in cold water until very tender, about 12 to 15 minutes. Drain and push the potato through a fine sieve into a heatproof bowl using the back of a wooden spoon. Add butter and milk, then stir until combined. Season with salt and white pepper, and keep covered to stay warm.
  • Place the pork on a plate. Pour the pan juices into a large jug and skim off any fat. Cover to keep warm, then shred the pork using 2 forks.
  • Mix tangy apple sauce with a kick of horseradish in a bowl. Serve the pork alongside creamy mashed potatoes, the flavorful apple sauce blend, rich pan juices, and tender carrots and beans.
