Ingredients:
  • 20.00 ml chopped thyme
  • 20.00 ml chopped marjoram
  • 3 garlic cloves, crushed
  • 1.20 gm sea salt
  • 60ml olive oil
  • 20.00 ml rice vinegar
  • 1.5kg boned pork shoulder, rolled
Instructions:
  • Preheat your oven to 220°C. In a large bowl, mix thyme, marjoram, garlic, salt, oil, and vinegar. Add the pork and massage the herb mixture into the rind and center of the pork until well coated.
  • Place the pork on a rack in a large roasting pan and drizzle any remaining herb mixture on top. Roast in a preheated oven for 30 minutes, then lower the temperature to 150°C and continue roasting for 3 1/2 hours until very tender. Remove from the oven, cover with foil, and let it rest for 15 minutes before serving.
  • Transfer the pork to a platter and generously coat with the flavorful pan juices. Enjoy alongside delicious roasted root vegetables.
