Whip up cheesy red potato side dish in just 30 minutes with two simple steps!
Ingredients:
  • 1 1/2 pounds small red potatoes, cut in half
  • 3 tablespoons butter or margarine, softened
  • 1/3 cup buttermilk
  • 1 package (4 ounces) crumbled Gorgonzola cheese
  • 1/2 teaspoon salt
  • Dash of pepper
Instructions:
  • Place the potatoes in a 3-quart saucepan and cover them with water, adding salt if desired. Bring to a boil, then simmer for about 20 minutes until the potatoes are tender. Drain the potatoes and gently shake them in the saucepan over low heat to dry.
  • Incorporate butter, buttermilk, cheese, salt, and pepper into the potatoes. Gently mash with a fork or the back of a spoon, leaving some potato chunks for texture.
