Grill a beer-can chicken with garlic and liquid smoke for flavorful, tender perfection.
Ingredients:
  • 1 (3 pound) whole chicken
  • 0.25 cup vegetable oil
  • 3 tablespoons liquid smoke flavoring
  • 1 clove garlic, peeled
  • 0.66666668653488 (12 ounce) can beer
  • sea salt to taste
  • 1 pinch garlic salt, or to taste
  • 1 small whole potato
Instructions:
  • Heat up the grill to medium heat and lightly oil the grate.
  • Begin by washing the chicken and patting it dry with paper towels. Next, massage the entire chicken, including the inside, with vegetable oil. Mix liquid smoke flavoring with beer, then add a garlic clove. Stand the chicken upright in a grill pan with the beer can inside. Season the chicken's skin with sea salt, black pepper, and garlic salt, ensuring the seasonings are well incorporated. Place a potato in the neck cavity to trap steam and cover it with the neck skin flap, securing it with a toothpick.
  • Grill the chicken vertically until cooked through and the skin is crispy, approximately 2 hours. Ensure internal temperature reaches 165°F (75°C) when checked with a meat thermometer in the thickest part of a thigh, avoiding the bone.
