Sweet and salty gourmet chicken salad blend.
Ingredients:
  • 30.00 ml pomegranate molasses* (see Notes)
  • 60ml olive oil
  • Juice of 1/2 lemon
  • 1 radicchio, leaves torn
  • 1/2 oakleaf lettuce, leaves torn
  • 3 x 140g smoked chicken breast fillets (see notes)
  • 4 figs, quartered lengthways
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 50g manchego cheese (see notes)
  • Sourdough bread, to serve
Instructions:
  • In a small bowl, mix together the pomegranate molasses, oil, and lemon juice. Season to taste and set aside.
  • In a large bowl, mix together the radicchio and oakleaf lettuce. Shred the chicken over the salad, removing the skin. Add the fig and cucumber, then use a vegetable peeler to shave the manchego on top.
  • Drizzle dressing over salad and serve alongside sourdough slices.
