Spicy dry rub smoked chicken leg quarters bursting with flavor.
Ingredients:
  • 2 tablespoons salt, or to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground black pepper
  • 1 pinch cayenne pepper
  • 4 chicken leg quarters
  • wood chips, soaked in water for 20 minutes
Instructions:
  • In a bowl, mix salt, garlic powder, red pepper flakes, black pepper, and cayenne. Add chicken and toss to coat evenly. Cover with plastic wrap and marinate in the fridge for 4-8 hours.
  • Preheat the electric smoker to 275 degrees F (135 degrees C) with the top vent closed, three hours before cooking.
  • Prepare the chicken by taking it out of the refrigerator. Put a chicken leg quarter on each of the four wire racks, then place them in the smoker. Fill the water pan with water, add two batches of soaked wood chips as directed by the manufacturer, and open the vent.
  • Smoke chicken for 2 1/2 hours, adding wood chips every hour. Ensure it reaches an internal temperature of 165 degrees F (74 degrees C).
