Quick and easy healthy salad ready in under 30 minutes.
Ingredients:
  • 400g can chickpeas, drained and rinsed
  • 160.00ml lemon juice
  • 2 cloves garlic, crushed
  • 82.50 ml plain low fat yoghurt
  • 1.25 gm ground cumin
  • 5 drops of Tabasco (or to taste)
  • 700g baby coliban potatoes
  • 1/2 cauliflower (about 450g), trimmed into florettes
  • 1 Lebanese cucumber, halved and sliced
  • Salt & freshly ground black pepper
  • 150g triple smoked leg ham, cut into strips
  • 100g pkt baby cos hearts
Instructions:
  • Blend chickpeas, lemon juice, and garlic in a food processor until smooth. Mix in yogurt and ground cumin. Season with Tabasco, salt, and pepper to taste.
  • In a large saucepan, cover the potatoes with water and bring to a boil. Cook for 15-20 minutes until tender. Drain and slice them.
  • In a saucepan, bring water to a lively boil. Blanch cauliflower for 5 minutes or until tender. Drain and rinse under cold water.
  • Combine sliced potato, cauliflower, and cucumber in a bowl. Drizzle with lemon juice and olive oil, season with salt and pepper generously. Add ham and baby cos leaves, gently mix. Serve with a dollop of the hommus dressing.
