Pea and smoked ham croquettes

Golden, crispy croquettes perfect for entertaining or as a delicious main dish paired with salad or veggies.
Ingredients:
  • 30g butter
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 500.00 ml frozen peas, thawed
  • 200g thickly-sliced smoked ham, finely diced
  • 1 quantity panada (see related recipe)
  • 125.00 ml plain flour
  • 2 eggs, lightly beaten
  • 500.00 ml fresh white breadcrumbs
  • vegetable oil, for deep-frying
  • Maldon sea salt, to serve
Instructions:
  • In a saucepan, melt butter over medium heat. Add onion and garlic, cook and stir for 1 minute. Add peas and cook, stirring, for 5 minutes until soft. Roughly mash peas with a potato masher and transfer to a large bowl.
  • Combine the ham and warm panada with the pea mixture. Season generously with salt and pepper, ensuring even distribution. Mix thoroughly to incorporate all ingredients. Cover the mixture and let it chill in the refrigerator for at least 2 hours until thoroughly cooled.
  • Dust hands with flour. Shape mixture into small balls using 1 tablespoon at a time. Coat each croquette in flour, dip in egg, then roll in breadcrumbs, pressing firmly to coat. Place on a tray, cover, and refrigerate for 15 minutes until firm. Preheat oven to 160°C.
  • In a large, heavy-based saucepan or wok, heat oil until one-third full over medium heat. Fry 8 croquettes at a time for 2 minutes until golden brown. Transfer to a wire rack over a baking tray and keep warm in the oven while frying the rest. Season with sea salt and serve. Enjoy!
