Smoked paprika barbecue corn

Whip up a quick and tasty barbecue side dish in just 30 minutes!
Ingredients:
  • 10.00 gm smoked paprika
  • 1/2 tsp cayenne pepper
  • 8 corn cobs, husks on
  • 20.00 ml lemon rind, finely grated
  • 82.50 ml flat-leaf parsley, chopped
Instructions:
  • Preheat barbecue on high. Mix butter, paprika, cayenne pepper, and garlic in a bowl. Season to taste.
  • If desired, use a thin length of corn husk to tie back the husks. Spread the corn with half of the butter mixture. Cook for 12-14 mins, turning occasionally, until corn is charred in spots and fully cooked. Brush the corn with the rest of the butter mixture and transfer to a serving platter.
  • Mix the lemon zest and fresh parsley in a small bowl, then sprinkle this aromatic mixture over the corn before serving.
