Smoked salmon and pesto pizza

Healthy and delicious low-fat smoked salmon pizza topped with basil pestjson - a flavorful meal!
Ingredients:
  • 4 small wholemeal pita pockets
  • 40.00 gm basil pesto
  • 50g baby spinach leaves, plus extra, to serve (optional)
  • 150g small cherry tomatoes, halved
  • 1 zucchini, peeled into ribbons
  • 1 small red onion, thinly sliced
  • 2 tsp finely grated lemon rind
  • 90g salt-reduced smoked salmon
  • 40.00 ml natural yoghurt
Instructions:
  • 1. Preheat your oven to 200C (180C fan forced) and line 2 baking trays with parchment paper. 2. Arrange the pitas on the trays, then spread 2 teaspoons of pesto on each pita. 3. Layer with spinach leaves, tomatoes, zucchini, and onion. 4. Lastly, sprinkle some lemon rind over the top.
  • Bake for 10-12 minutes, swapping trays halfway, until golden and crisp. Top with salmon, drizzle with yogurt, and serve with extra spinach if desired.
