Irresistible smoked salmon pappadum stack with contrasting textures.
Ingredients:
  • Vegetable oil, to shallow-fry
  • 12 small pappadums
  • 125g yoghurt
  • 40.00 ml finely chopped garlic chives
  • 62.50 ml finely chopped round mint
  • 12 slices smoked salmon
  • 2 Lebanese cucumbers, ends trimmed, sliced into ribbons
  • 1 ripe avocado, halved, stoned, peeled, thinly sliced lengthways
  • 250.00 ml mixed snow pea sprouts
  • 125.00 ml round mint leaves
Instructions:
  • 1. Heat a generous amount of oil in a small frying pan until it reaches 1cm in depth. 2. Carefully add pappadums one by one, and fry for 1-2 minutes, flipping occasionally, until they puff up and turn golden. 3. Transfer the fried pappadums to a plate lined with paper towel to absorb excess oil.
  • Combine the yoghurt, lemon juice, chives, and chopped mint in a small bowl. Season with salt and pepper to taste.
  • On individual serving plates, elegantly lay a pappadum and crown it with a luxurious slice of smoked salmon. Compose a stunning arrangement of cucumber, avocado, snow pea sprouts, and mint on top of the salmon, then generously drizzle with dressing. Repeat the layers with the remaining pappadums, salmon, cucumber, avocado, snow pea sprouts, mint, and dressing for a vibrant presentation. Serve promptly to savor all the fresh flavors.
