Create an impressive Asian dish with ease.
Ingredients:
  • 1 1/4 cups water
  • 1 cup uncooked sushi rice
  • 1/4 cup seasoned rice vinegar
  • 2 tablespoons less-sodium soy sauce
  • 1 1/2 teaspoons seasoned rice vinegar
  • 1/4 to 1/2 teaspoon wasabi paste
  • 2 tablespoons sesame seed, toasted*
  • 1 avocado, peeled and cut lengthwise into 16 slices
  • 1 package (3 oz) thinly sliced salmon lox
  • 4 teaspoons chopped pickled ginger slices (from 6-oz jar)
Instructions:
  • In a 2-quart saucepan, bring 1 1/4 cups of water and rice to a boil. Reduce heat to low, cover, and simmer for 10 to 15 minutes until tender. Transfer rice to a large bowl and use chopsticks or forks to gently cool. Gradually add 1/4 cup of vinegar to the rice, stirring constantly. Cover the bowl with a damp towel and allow the rice to cool to room temperature.
  • Combine the dressing ingredients in a small bowl using a wire whisk.
  • Start by moistening your hands with cold water, then separate the rice into 4 even portions. Shape each portion into an oval patty about 3/4 inch thick, and coat the edges with sesame seeds. Transfer the patties to a serving plate. Add 1 to 2 teaspoons of dressing on top of each patty. Place 4 avocado slices onto each patty, followed by a portion of sliced salmon and 1 teaspoon of ginger slices. Serve your dish right away for the best taste.
