Smoked trout and watermelon salad: a refreshing summer delight.
Ingredients:
  • 350g seedless watermelon, peeled, chopped
  • 1 smoked trout (about 300g), bones and skin removed, flaked
  • 2 x 100g pkts baby Asian salad leaves
  • Handful mint leaves, torn
  • Handful basil leaves, torn
  • 24.00 gm sesame seeds, toasted
  • 80ml peanut oil
  • 42.00 gm fresh lime juice
  • 21.00 gm soy sauce
  • 2 tsp sesame oil
  • 10.00 gm caster sugar
Instructions:
  • In a bowl, mix together the watermelon, flaked trout, salad leaves, mint, and basil for a flavorful combination.
  • Prepare the dressing by whisking all dressing ingredients together. Drizzle the dressing over the salad, toss until well coated, and garnish with sesame seeds before serving.
