Creamy tarragon dressing elevates summer smoked trout salad.
Ingredients:
  • 1 x 175g pkt smoked ocean trout portions, flaked
  • 100g baby cos lettuce, leaves separated
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced
  • 2 celery sticks, ends trimmed, thinly sliced diagonally
  • 1 x 250g punnet small grape tomatoes, halved lengthways
  • 85g (1/3 cup) sour cream
  • 60ml (1/4 cup) fresh lemon juice
  • 40.00 ml chopped fresh tarragon
Instructions:
  • Combine the trout, lettuce, cucumber, celery, and tomato in a large bowl, tossing gently until mixed.
  • Prepare the dressing by combining sour cream, lemon juice, and tarragon in a small bowl. Mix thoroughly until smooth. Adjust seasoning with salt and pepper to taste.
  • Plate the salad individually and generously drizzle the flavorful dressing before serving.
