Spicy seasoned whole smoked chicken is bursting with flavor.
Ingredients:
  • 2 tablespoons paprika
  • 2 tablespoons cayenne pepper
  • 2 tablespoons freshly cracked black pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt
  • 1 (3 1/2) pound whole chicken
Instructions:
  • Set your smoker to a temperature of 250 degrees F (120 degrees C).
  • Combine paprika, chili powder, cayenne, black pepper, thyme, garlic powder, onion powder, and salt in a large mixing bowl, using a fork to blend until well mixed.
  • Place the chicken breast-side down on a work surface. Use kitchen shears to cut along both sides of the backbone starting from the tail end and remove it. Open the chicken like a book by holding both sides. Turn the breast-side up and press down on each side of the breast until it flattens and you hear a crack. Rub the entire chicken with the seasoning blend.
  • Smoke the chicken in the preheated smoker until an instant-read thermometer inserted into the thickest part of the thigh near the bone reads 140°F (60°C) for about 3 1/2 hours. Increase the heat to 350-400°F (175-200°C) and crisp up the skin directly until the internal temperature reaches 160°F (71°C), which takes about 15 minutes.
  • After smoking, wrap the chicken in foil and let it rest until it reaches an internal temperature of 165°F (74°C), approximately 10 minutes. Slice and plate.
