Smoked Whole Branzino

Zesty lemon and herb marinated smoked branzino - light, flaky, and flavorful.
Ingredients:
  • 6 stalks green onions, coarsely chopped
  • 0.25 cup chopped fresh parsley
  • 3 cloves garlic, coarsely chopped
  • 4 medium lemons, zested
  • 0.5 cup olive oil
  • 1 Thai chile pepper, finely chopped
  • 2 large whole branzino fish
  • salt and ground black pepper to taste
Instructions:
  • In a food processor, blend green onions, parsley, garlic, and lemon zest until smooth. Slowly pour in 1/2 cup of olive oil with the processor running until the mixture is well combined. Finally, mix in Thai chili peppers to the marinade.
  • Lay the fish in a glass dish and generously coat it with the marinade. Seal the dish with plastic wrap and refrigerate for 4 to 8 hours to marinate.
  • Preheat the smoker until it reaches a sizzling 400 degrees F (200 degrees C).
  • Remove the fish from the flavorful marinade, gently shaking off any extra. Season it with a sprinkle of salt and pepper, then discard the remaining marinade.
  • Brush the preheated smoker grates with oil using a paper towel. Arrange the fish in the smoker with the heads towards the fire box. Use a digital probe to check the thickest part. Smoke until the fish reaches 130°F (54°C) internal temperature, approximately 30 minutes.
