Enhance cauliflower's natural sweetness and nuttiness with a hint of hickory and apple wood smoke in this versatile, easy-to-make side dish that pairs perfectly with any meat.
Ingredients:
  • hickory and apple wood chips, as needed
  • 1 (2 pound) head cauliflower
  • 0.5 teaspoon seasoned salt
  • 1 tablespoon mayonnaise
  • 1 tablespoon barbeque sauce
Instructions:
  • Heat up your outdoor smoker to a toasty 250 degrees F (120 degrees C) and toss in hickory and apple wood chips as directed by the manufacturer.
  • Coat the cauliflower head in olive oil and generously season with seasoned salt and pepper.
  • Smoke the food on the preheated smoker rack until tender, approximately 2 hours.
  • Combine the mayonnaise and barbeque sauce in a small bowl, whisking until creamy and well blended.
  • Place the cauliflower in a serving dish and generously drizzle the mayo mixture over the top just before serving.
