Smoky BBQ Chicken Salad

Award-winning 2009 recipe! Smoky barbecue sauce elevates a delicious chicken salad.
Ingredients:
  • 1 box Betty Crocker™ Suddenly Salad® ranch & bacon pasta salad mix
  • 1/2 cup frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 2 cups shredded rotisserie chicken
  • 1 cup cherry or grape tomatoes, halved
  • 12 butter lettuce leaves
  • 4 medium green onions, chopped (1/4 cup)
Instructions:
  • Pour the Pasta mix into a 3-quart saucepan filled two-thirds of the way with boiling water. Let it gently boil without a lid for 12 minutes, stirring occasionally. Add the corn during the last 2 minutes of cooking.
  • After cooking the pasta and corn, refresh them by rinsing with cold water and giving them a good shake to remove excess moisture.
  • Combine Seasoning mix, mayonnaise, and barbecue sauce in a large bowl. Add pasta, corn, chicken, and tomatoes; mix well. Arrange lettuce leaves on a serving plate, spoon salad mixture on top, and garnish with green onions. Serve immediately or refrigerate for 1 hour before serving.
