Budget-friendly turkey club burgers with sweet potato wedges and chipotle aioli.
Ingredients:
  • 500g turkey mince
  • 23.40 gm dijon mustard
  • 40.00 ml finely chopped fresh at-leaf parsley leaves
  • 1 egg, lightly beaten
  • 250.00 ml fresh breadcrumbs
  • 750g sweet potato, cut into thin wedges
  • 56.88 gm extra virgin olive oil
  • 2 middle bacon rashers, trimmed, halved
  • 4 slices swiss cheese
  • 123.75 gm aioli
  • 41.60 gm chipotle chilli sauce
  • 4 white bread rolls, split, toasted
  • 250.00 ml finely shredded iceberg lettuce
  • 1 avocado, thinly sliced
  • 1 large tomato, sliced
Instructions:
  • In a bowl, combine mince, mustard, parsley, egg, and breadcrumbs. Season generously and mix thoroughly. Form the mixture into 4 patties that are 2cm thick. Place them on a large plate, cover, and refrigerate for 30 minutes.
  • Preheat your oven to 200C/180C fan-forced. Line a large baking tray with baking paper. Spread sweet potato on the tray, drizzle with 2 tablespoons of oil, season with salt and pepper, and bake for 40 minutes until golden and crisp.
  • In a large frying pan over medium-high heat, heat the remaining oil. Cook bacon, turning occasionally, for 4 to 5 minutes until crispy and golden. Place on a paper towel to remove excess oil, then cut in half. Reduce heat to medium, add patties to the pan, and cook each side for 5 minutes until fully cooked. Top with cheese and continue cooking for 1 more minute until melted.
  • Mix aioli and chili sauce in a small bowl.
  • Spread a generous layer of half of the aioli mixture on the bottom halves of the rolls. Layer with lettuce, avocado, bacon, patties, and tomato. Top with the other halves of the rolls. Serve alongside sweet potato wedges and the remaining aioli mixture.
